Neapolitan pizza: influences, peers and legacy
Every connection with its receipt
Neapolitan pizza is less a recipe than a codified craft: Vesuvian tomatoes, buffalo mozzarella, a wet low-protein dough slapped by hand and blasted at 485°C in a wood-fired oven. Its canon was written by street vendors, travel writers and dialect cookbooks long before UNESCO listed the pizzaiuolo's art in 2017. - Key Influence · La cucina teorico-pratica by Ippolito Cavalcanti (1837). The Duke of Buonvicino appended a Neapolitan-dialect section to his cookbook that includes some of the earliest written pizza instructions, describing doughs dressed with tomato, cheese, anchovy and lard. It is the document that drags pizza out of unrecorded street trade and into the written culinary record, fixing toppings that the modern marinara and margherita still follow. Every claim about what 19th-century Naples actually ate leans on it.

De Bourcard's illustrated survey of Neapolitan customs contains a dedicated account of the pizzaiuolo alongside hand-coloured plates of street life, describing oven, counter and clientele with ethnographic precision. It is the closest thing to a photograph of pre-unification pizza culture, and the source historians use to show that today's dough-slapping, fast-fire technique and portafoglio fold are genuinely nineteenth-century rather than modern inventions.

De Sica's portmanteau portrait of Naples opens with the episode 'Pizze a credito', in which Sophia Loren plays a pizzaiola's wife working the wood oven and the street counter. Shot in the city with real pizzeria geography, it preserves the credit-selling custom Serao described and remains the single most influential screen image of Neapolitan pizza-making, exported worldwide as the dish's visual mythology.

Goethe's Naples chapters describe the city's open-air eating, its macaroni vendors and the sheer public theatre of street food, giving Northern Europe its template for Neapolitan appetite. The Grand Tour gaze he perfected is what later made a flatbread into a destination dish: pizza's international prestige was built as much by foreign travel literature as by any pizzaiolo's technique.

Founded by Neapolitan pizzaioli under Antonio Pace, the AVPN wrote the specification that turned craft into law: 00 flour, natural yeast, hand-shaped 3mm base, a cornicione of 1–2cm, San Marzano or Piennolo tomatoes, mozzarella di bufala campana or fior di latte, 60–90 seconds at roughly 485°C in a wood oven. It underpinned the EU's STG protection in 2010 and the 2017 UNESCO listing of the pizzaiuolo's art.
- Legacy · Bianco: Pizza, Pasta, and Other Food I Like by Chris Bianco (2017). Bianco built Pizzeria Bianco in Phoenix around a wood-fired oven, hand-stretched dough and ingredient obsession explicitly learned from the Neapolitan model, then made his own mozzarella when supply failed. Widely credited with starting America's artisan pizza movement, he is the clearest case of the Naples standard transplanted and acknowledged, and his book argues for the craft's values rather than merely its recipes.
